Tr-tip is one of our favorite cuts of beef. It’s got a great rich beefy flavor, almost like brisket. We season with salt and pepper, smoke until tender, cool, vacuum seal and deliver to you.
We recommend simmering the bag in a pot of water for 25 minutes, remove and let rest for 5-10 minutes. Optional: finish on the grill to mark the outside.
